Avocado toast is my go-to when I need something healthy and quick. Sometimes I’ll add a squeeze of lemon and a sprinkle of salt and pepper. If there’s a tomato lying around, I’ll slice that up and throw it on top. The whole thing takes less than five minutes. If I’m feeling like putting in a little more effort, I’ll fry an egg and add it on top, but honestly, it’s solid on its own. The key is to use a ripe avocado—if it’s too hard, it just doesn’t mash right. I keep everything simple, but you can add chili flakes or everything bagel seasoning if you want a little extra flavor. This is one of those meals that doesn’t require any real cooking skills. It’s basically just assembly.
