So, I opened my pantry and spotted an onion with a full-on green sprout. Instead of tossing it, I got curious. I grabbed a pot, filled it with soil, and tucked the onion in, sprout up. I kept the soil damp and put it by the window. Within days, the green shoot stretched even taller! Watching it grow felt like a tiny victory. I realized sprouted onions are basically begging for a second chance. Plus, the green tops are awesome in salads or scrambled eggs. Now, every time I see a sprout, I get excited to plant it.
