Stir fry is my answer when I need dinner fast. I always start by slicing up whatever protein I have—chicken, beef, or tofu—into thin strips. For veggies, I usually grab bell peppers, broccoli, and carrots, cutting them thin so they cook quickly. The wok goes on high heat until it’s just starting to smoke, then I add a splash of oil and toss in some garlic and ginger. Meat goes in first, gets a quick sear, then I throw in the firmer veggies. Softer veggies like mushrooms and bean sprouts go in last. A bit of soy sauce or oyster sauce at the end ties it all together.
