Start by mixing a simple egg dough—just flour, eggs, and a pinch of salt. Let it rest for about 30 minutes so it gets nice and elastic. While the dough is resting, whip up your filling. Cheese is always a winner, but sausage or mushrooms are awesome too. Make sure the filling cools before you use it. Roll out your dough by hand or with a pasta machine until it’s thin but not see-through. Lay it out flat. Spoon small mounds of filling onto the dough, or use a ravioli mold if you have one. Cover with another sheet of dough, press around the filling, and trim the edges. Boil the ravioli in salted water for just a few minutes until they float. That’s it!
