Quick Creamy Mac and Cheese Fix

Boil your favorite pasta shape in salted water until just tender. Drain and set aside. In the same pot, melt butter over medium heat, then whisk in a little flour to make a roux. Let it cook for about a minute. Slowly pour in milk, whisking constantly until the sauce thickens up. Add a pinch of salt and pepper. Stir in a generous handful of shredded cheddar cheese (or whatever cheese you love) until it’s all melty and smooth. Toss the pasta back in, mix well, and serve hot.
