Wait until your garlic scapes start curling and looping—this means they’re ready to harvest and full of flavor. Use sharp scissors or garden shears to cut the scape as close to the base as possible, but don’t nick the clove or leaves. Store your fresh scapes in the fridge wrapped in a damp paper towel, or stand them in a glass of water if you’ll use them soon. When you’re ready to cook, rinse the scapes under cool water and pat dry. Trim off the tough ends and the bulbous tip. Slice thin for salads, stir-fries, or dips, or cut into bigger pieces for soups and sautés.
