Creamiest Mashed Potatoes Ever—You Need This Trick

Start by peeling and chopping 3 lbs. of mixed potatoes (I like russets and Yukon Golds for the best texture). Cover them with water in a big pot, toss in a generous pinch of kosher salt, and bring to a boil. Let them cook until fork-tender, about 15-20 minutes. Drain and return the potatoes to the pot. Mash until smooth—use a ricer if you want them extra fluffy! While the potatoes are cooking, warm up 1/2 cup whole milk and 3/4 cup butter in a saucepan until the butter melts. Pour this over the mashed potatoes and stir until creamy. Add 1/2 cup sour cream, salt, and black pepper. Mix well. Top with extra butter and chopped parsley before serving.
