Grab whatever veggies you have—bell peppers, carrots, onions, and spinach work great. Slice them thin for that classic japchae look. Cook your sweet potato noodles according to the package. I usually boil them for about 6 minutes, but some people like to soak them longer in hot water. Totally up to you! Sauté your veggies in a little oil, then toss in the noodles. Add soy sauce, a bit of sugar, and sesame oil. Mix everything together until it’s glossy and flavorful. If you have bulgogi beef or some leftover omelet, slice and throw them in for extra protein.
