Is Your Deep Fryer Oil Past Its Prime? Time to Check!
First, give your oil a sniff—if it smells rancid or just plain off, it’s time to swap it out. Neutral-smelling oil is what you want for the best-tasting fried food.
Next, look at the oil in a clear glass. If it’s cloudy, dark, or has bits floating in it, don’t risk it—replace it. Burnt flavors in your fries or wings are another big sign you’ve waited too long.
If you fry breaded foods often, change the oil every 3-4 uses. For battered foods, you can stretch it to about 12 uses. Even if you don’t fry much, change the oil every 1-2 months regardless.
When it’s time to change, unplug the fryer and let the oil cool completely. Pour it into a sturdy container (never down the drain!) and dispose of it properly. Clean your fryer before refilling with fresh, high smoke-point oil.
