Start by pouring 1/2 cup of good EVOO, 1 cup fresh lemon juice, and 3-4 minced garlic cloves into a bowl. Grab a fresh oregano branch (seriously, it makes all the difference!) and use it to stir the mixture—let those oregano bits fall in for extra flavor. Dip your chicken cutlets into the lemony mix, using the oregano branch to really coat them. Arrange the cutlets on a baking sheet and broil for about 10 minutes. For even more flavor, baste the chicken with the lemon mixture a couple of times while it cooks. Serve hot with your favorite sides.
