Oven Light Proofing Trick for Fluffy Bread

Want your bread to rise higher and fluffier? Here’s my go-to hack for any dough that needs proofing: Place your dough in the pan you’ll bake it in. Pop it into your oven (don’t turn the oven on!). Switch on the oven light and leave the dough in there for the time your recipe says—mine took about an hour. The gentle warmth from the oven light helps the dough rise so much better.
