Ricotta on toast is my latest thing. I grab a thick slice of sourdough, toast it up, then pile on a generous layer of ricotta. I slice up some ripe tomatoes, toss them on top, and drizzle everything with balsamic glaze. Fresh basil leaves go on last—sometimes I even tear them right over the toast. The combo of creamy ricotta, sweet-tart balsamic, and juicy tomatoes just works. I’ve even started eating ricotta straight from the container with a little salt and balsamic when I’m feeling lazy.
