Pour 3/4 cup granulated sugar into a pan over medium heat. As it starts to melt, stir with a rubber spatula. The sugar will clump and look sandy—don’t panic, just keep stirring until it’s fully melted and smooth. When the sugar is a deep amber color, add 1/3 cup cubed butter. It’ll bubble up a lot, but keep stirring until the butter is totally melted in. Turn off the heat and slowly stir in 3/4 cup heavy cream. Mix until the caramel is silky and smooth. Add salt to taste, then pour into a jar. Store in the fridge and use it on everything! Making caramel used to stress me out, but it’s honestly way easier than it looks.
