Tried making fried chicken poutine at home for the first time and it turned out way better than expected. Started by double-coating chicken thighs in seasoned flour and buttermilk, then fried them until golden and crunchy. For the fries, I went with hand-cut russets—soaked them in cold water, dried, and fried twice for that extra crisp. The gravy was a quick stovetop mix with chicken stock, butter, and a bit of flour. Layered everything up: fries, cheese curds, hot gravy, and big chunks of fried chicken. The cheese curds melt just enough from the heat. If you want the chicken to stay crispy, add it last and pour the gravy around, not over.
