Took A Stab At Ratatouille 🍅🍆

Made Ratatouille from scratch yesterday and couldn't believe how the vegetables completely transformed. The tomatoes, eggplant, zucchini, and bell peppers melded into something entirely different than expected. Reminded me of this tiny restaurant in Provence during my college trip - though theirs was way more flavorful. Spent two hours chopping everything into perfect circles only to watch it all collapse into a stew.
