If you’re not afraid of dying from sprouted potatoes(like me)

Sprouted potatoes always seem to show up in the pantry when least expected. Instead of tossing them, I usually cut off the sprouts and any green spots, then peel them well. Last week, I made a simple potato hash. I diced the potatoes into small cubes, soaked them in cold water for about 10 minutes to get rid of excess starch, then dried them off. Into a hot skillet with a bit of oil, I tossed in the potatoes, some chopped onions, and a sprinkle of smoked paprika. Letting them sit undisturbed for a few minutes helps get that crispy edge. Once golden, I added a handful of chopped parsley and a pinch of salt. They turned out crisp on the outside and tender inside. Sprouted potatoes work fine as long as you trim them well and cook them thoroughly. I saw some idiot on YouTube and tiktok saying that the sprouted potatoes would kill you. I was raised in the country and we always cut them off, peeled the taters and fried, cooked or baked them.

After cutting the sprouts off I plant them 4 inches deep and harvest fresh potatoes in the fall! It’s so fun!! Try it!

I remember removing the eyes with my grammy when I was very little before she would cook them. We had a cold cellar, in our basement, where she would store foods, and eventually the potatoes would grow little eyes. She had a large vegetable garden, so maybe she planted some.

worked for a potatoe farmer in the late 60s we cut seed every spring. and planted hundreds of acres of potatoes and grew them at home in our own garden never got sick from them. always make sure there is a eye on each seed piece of spud. that was all the fresh cut seed was coated with fresh lime and wheat flower mix and then planted later it gave the spud a boost. to grow and make it's own root bed bringing them into a hill around the plant makes them bring their potatoe babies closer to the surface.
